This sauce is not a joke – it’s seriously fiery! When you’re making hot sauce, a slow cooker is absolutely your best friend – as you slow cook the chillies they become so much more potent and intense, just what we’re looking for. Traditionally served as a condiment with Mexican food, but if you love spicy food I can’t see why you wouldn’t also use it to add heat to soups and stews, Asian dishes ... the works. Use very sparingly – we’re talking drops! This recipe makes half a litre, which I’d say is quite a lot – perfect for decanting into little bottles and giving as edible gifts.
