Why eat plain rice when this delicious coconut rice is absolutely no more effort! There isn’t a curry to my mind that isn’t improved by a side of coconut rice. The trick when cooking any rice in the Thermomix or thermo cooker bowl is to never try and cook it to completion – when the machine stops the rice should be nearly cooked, but not quite. You want to allow it to stand for five to ten minutes in the bowl, lid on. In this time the residual heat will finish cooking the rice and you’ll be left with soft, fluffy grains – no mush or porridge.
